Ceviche is a scrumptious seafood dish which originated in Peru but is now a firm favourite across the coastal areas of the continent and Empanadas are tasty chicken, fish or cheese turnovers which are savoured throughout South America. Whether it's Caldillo de Congrio, a Chilean fish stew made with conger eel; So'o-Iosopy, Paraguay's ground beef soup, or Churrasco, a smorgasbord of grilled meats from Brazil, you won't have any trouble finding something to satisfy your appetite.

Fried plantains are a tasty treat throughout South America, while Dulce De Leche is a popular milky caramel dessert. The Pisco Sour is a brandy-based cocktail which is the national drink of Chile and Peru, but also much-loved across the rest of South America.

Best Time

The immense size, variations in altitude and diverse regions in South America means there is no universal 'fit-all' best time to visit. As a rule of thumb, October and November are good months for a cruise in South America as this is the time of year when several countries enjoy appealing spring-like weather, while December and January are excellent months for opportunities to observe wildlife.
So much depends on the type of weather, activities and conditions you prefer. Columbia, for example, is a hive of activity in December when the beaches are busy with holidaymakers, with plenty of water sports action. Northern Argentina and Chile enjoy summer temperatures from November to April, while Peru is delightful for most of the year, with the exception of the rainy season from January to March. November to March is a great time to visit Brazil - this is the country's carnival season and temperatures range between 27°C and 33°C.
